TINGA DE TERNERA
Tinga is a typical dish from central Mexico, possibly originally from Puebla. Although it can be made with many meats, we decided on veal and it consists of shredded meat stewed with tomato onion and chipotle chili. It is customary to accompany it with rice, lettuce and avocado.
COCHINITA PIBIL
Cochinita pibil is probably the most typical dish of Yucatecan food. It is pork marinated with axiote, an exotic and delicious local seed that gives it a very characteristic flavor. It is usually accompanied with fresh red onion and habanero pepper sauce.
CARNITAS MICHOACANAS
This Creole dish (not mestizo) is one of the results of the adoption of the pork brought from Europe to Mexican food. Although its origin is discussed by several states, the most likely is that of the state of Michoacan, specifically in the municipality of Quiroga.
TACOS AL PASTOR
They are the quintessential Mexican dish. They all have their way of defining the perfect preparation: with or without lemon, with red or green sauce, with and without vegetables, but there is always something in common: marinated pork and served with pineapple slices..
POLLO A LOS TRES CHILES
It is an exquisite Mexican dish that belongs to traditional homemade food and especially to fondas in their menus. Although its origins are lost in time, recipes are known in colonial times in convents in both Puebla and Queretaro.
